Ingredients:
2 1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. ground cinnamon
1 1/2 tsp. ground ginger
1 1/2 tsp. ground nutmeg
1/8 to 1/4 tsp. ground cloves
3 eggs
1/4 c. firmly packed brown sugar
1 c. buttermilk
1 c. water
1/4 c. brewed coffee
1/4 c. butter or margarine, melted
Applesauce and/or Maple Syrup (optional)
Directions:
Combine first 8 ingredients; mix well, and set aside. Combine eggs and sugar, beating well. Add buttermilk, water, coffee and butter; mix well. Add buttermilk mix to dry ingredients, stirring just until moistened (batter will be slightly lumpy). For each pancake, pour about 1/4 c. batter onto hot, greased griddle or skillet. Turn when the tops are covered with bubbles and edges are slightly dry. Serve with warm applesauce or maple syrup, if desired.
