Ingredients:
4 potatoes
1 tbsp grated onion
1 large egg
1/3 c. flour
3/4 tsp salt
Oil for frying
Directions:
Peel potatoes and grate very finely; there should be about 3 c. grated. Squeeze out some of the moisture in the potatoes. Add onion, egg, flour and salt. Beat until well blended. Put 1/2 inch of oil in skillet. Drop batter by heaping tablespoonfuls into hot fat and fry till crisp and brown on both sides. Remove and drain on absorbent paper. Serve hot with sour cream, hot applesauce, cream cheese or apricot or prune puree, if desired.
